Inaugurated in 2012, Le Palaie's brand new wine cellar is equipped with the most modern technologies of deraspatura, pressing and vinification and an integrated barrique cellar for the aging of wines. The steel trochoconical wine-making tanks, equipped with a manual fuller on rails, are connected to Persec's SAEn5000 System, which allows to manage in an integrated way, in addition to the temperatures with the control monitors placed on the tanks, also the ventilation and air conditioning of the barrique cellar's wine-making rooms where, arranged on niches between the barriques, some sculptures transform the environment into a real art gallery. The reception and tasting rooms are located on the upper floor. The two floors are connected by a scenographic staircase with glass walls that allow the visitor to see the technical rooms.
